Salt and Vinegar Kale

I adore crisps, but am always looking for healthier alternatives. When I realised just how easy kale crisps were to make at home I was hooked. The key is to use the tiniest amount of oil and a not too hot oven.


The recipe below is my favourite, but you can get creative with herbs and spices for these crisps. I used Cavolo Nero for this batch which gives large, flat crisps, but any kale will work.


Recipe


Heat your oven to fan 120 C.

Tip the kale onto a baking tray.

Mix oil and vinegar and drizzle over the kale.

Massage the oil and vinegar into the kale until it's all coated.

Spread the kale out then sprinkle over the salt and paprika.

Place in the oven for 10 minutes.

Remove the baking tray and give the kale a shuffle. At this stage some bits will be starting to crisp up.

Place back in the oven and check every 5 minutes until all the kale is crisp.

If you're not going to eat the same day, store in an airtight container.
