This has to be the easiest salad ever. Great for when we go from "When is summer going to start?" to "It's too hot to do anything" weather, which in the UK generally takes only a couple of days. This really is minimum effort for a sophisticated little dish.
Peel and grate some carrots (you choose how many), drizzle with enough Yaffle House Orange and Bay Vinegar to just moisten. Chop a few fresh mint leaves (or some parsley) and add to the carrots. Toss well, tip into a serving dish and sprinkle with pumpkin and poppy seeds. Done! Lovely with rare roast beef, grilled haloumi or a BBQ.
